Who says brownies have to be full of refined sugars and saturated fats? This recipe will allow you to enjoy an intense and smooth chocolate cake, perfect for a healthy and delicious snack. These brownies are made with simple and wholesome ingredients such as wholemeal flour, vegetable yoghurt, dark chocolate and crunchy macadamia nuts.
Ingredients:
- 150 g wholemeal flour
- 2 x 125 g pots of sugar-free white vegetable yoghurt
- 150 g dark chocolate
- 1 tablespoon coconut oil
- 2 tablespoons of oil (e.g. seed oil)
- 1 teaspoon baking soda
- 80 g integral cane sugar
- 80 g macadamia nuts
Preparation:
Start by melting the dark chocolate with the coconut oil in a bain-marie until smooth and homogenous. Meanwhile, sift the wholemeal flour, baking soda and brown sugar into a bowl for a lighter, airy mixture. Add the sugar, oil and melted chocolate to the yoghurt, stirring well to mix all the ingredients. Gently incorporate the sifted flour, avoiding lumps. Coarsely chop the macadamia nuts and add them to the mixture. Pour the mixture into a baking tray lined with baking paper and bake in a preheated oven at 180°C for about 25 minutes. Do a toothpick test: if it comes out moist, bake for a few minutes longer. Let cool completely before cutting into squares. Sprinkle with unsweetened cocoa powder and serve.
